Ingredients:

cup- Basmati rice, soaked

cups- Water

tbsp. Vegetable oil

tsp. Cumin seeds
1
stick- Cinnamon

Cardamom

Onion, chopped

Garlic cloves, minced

tsp. Ginger, minced
Salt
to taste

tsp. Coriander powder

tsp. Turmeric powder

cups mixed vegetables- Carrots, Beans, Potatoes

leaves for garnish

In a wide frying pan, heat the oil.

Add the cumin seeds, cinnamon stick, cardamom and cloves, saute on medium heat
for a minute, or till the spices begin to sizzle.

Add the onion, ginger and garlic and sauté for 4-5 minutes on medium heat.

Add the vegetables and sauté for 5-6 minutes.

Add the salt, coriander powder, turmeric powder and 2 cups of water, bring to a
boil on high heat.

Add rice and lower heat to medium and cover the pan half way once bubbles begin
to form on the surface.

Cover the pan completely once the moisture has evaporated. Cook on low heat for
about 10-15 minutes or till the rice is done.
8. Garnish with coriander leaves and serve hot.
