Sweet and Sour Grape Smoothie

Ingredients:
2 cups- Green sour grapes (freeze them for 8-10 hours)
1/2 cup- Yogurt
2/3 cup- Cold water
1/4 cup- Sugar
Few drops- Vanilla essence

Method:
1. After freezing the grapes, blend all the ingredients until smooth.
2. Serve immediately this so yummy grape smoothie.

Kiwi - Banana Salad

Ingredients:
5- Kiwis, peeled and cut in to small pieces
2- Ripe banana, cut in to small pieces
¼ cup- Red or yellow bell pepper, diced
1 tbsp. Shallot, chopped
1 tbsp. Lemon juice
1 tbsp. Olive oil
1 tsp. Vinegar
2 tsp. Honey
Pinch of salt
Black pepper to taste
10-12 Cashew nuts, toasted
1 tbsp. Mint leaves, chopped


Method:
1. Whisk lemon juice, olive oil, shallot, vinegar, honey, salt and pepper in a medium bowl.
2. Add kiwis, bananas, bell pepper, cashew nuts and mint leaves, toss to coat.
3. Serve chilled.

Fruit Salad

Ingredients:
3- Bananas, peeled and sliced
1- Apple, cut in to small pieces
1- Orange, peeled and cut in to small pieces
1- Bunch Black Grapes
1- Guava, cut in to small pieces
1- Green Apple, cut in to small pieces
1- Kiwi, peeled and sliced
5- Strawberry, sliced
½ cup- sugar (or to taste)
1 lemon juice (or to taste)
Pinch of salt

Method:

1. Take all the fruits in a big bowl.
2. Pour lemon juice immediately on fruits.
3. In a little water add sugar and half melt it on heat.
4. Mix melted sugar to the fruits.
5. Add pinch of salt to the fruits and mix well.
6. Refrigerate it and serve the fruit salad chilled.

Fruit Custard

Ingredients:
4 cups- Milk
4 tbsp. Custard powder
½ cup- Sweetened condensed milk
1 cup- Sugar (according to your taste)
½ cup- Grapes
½ cup- Pineapple, cut in to small pieces
1- Apple, peeled and cut in to small pieces
¼ cup- Pomegranate seeds
½ cup- Strawberries, sliced
1- Banana, peeled and sliced
1 small- Orange, peeled and cut in to small pieces

Method:
1. Mix custard powder in a little milk.
2. Boil the remaining milk with sweetened condensed milk and sugar
3. Slowly pour dissolved custard powder in hot milk.
4. Stir continuously until it thickens. Remove it from the flame and let the custard milk to cool.
5. When the custard is cooled add the fruits and mix well.
6. Put it in the refrigerator till its cold and serve with decorated fruits.

Fruit Chaat

Ingredients:
1- Oranges, skin removed and ½ each segment
1- Apple, cubed into ½ inch pieces
1- Banana, sliced into approximately ¼ inch rounds
½ cup- Strawberries, cubed
1- Pear, cubed into ½ inch pieces
½ cup- Grapes
1 cup- Cucumber, cubed into ¼ inch pieces
1 tbsp.  Cilantro, chopped
Dressing:
1 tbsp. Lemon juice
1 tbsp. Ginger juice
½ tsp. Cumin powder
1 tbsp. Sugar
Salt to taste
¼ tsp. Black pepper powder

Method:
1. In a large bowl combine fruits and cucumber with cilantro. Toss and set aside.
2. In a small bowl, mix all the dressing ingredients together; making sure that the sugar is completely dissolved.
3. Pour dressing over the fruits and serve.

Mughlai Fruit Pulao

Ingredients:
2 cups- Basmati Rice, soaked
3 cups- Warm water
1 cup- Fruits, (Strawberry, Orange, Pineapple, Apple, Grapes, pears)
½ cup- Vegetables, (Sweet corn and Carrots)
½ cup- Dry fruits (Raisins, Cashew nuts, Almonds)
½ cup- Warm milk
Few strands- Saffron
¼ cup- Cream
Salt to taste
A pinch- Sugar
¼ tsp. Turmeric powder
2 tsp. Ghee
1 tbsp. Butter
2 inch piece- Cinnamon
2- Bay leaves
3- Cardamom
2- Cloves
A pinch- Nutmeg
1 small- White Onion, chopped
2 inch piece- Ginger root
3 cloves- Garlic
1 tbsp. Coconut scrapes
3- Almonds 
1 tsp. Poppy Seeds
2 tsp. Rose water

Method:
1. Grind together 3 almonds, garlic, ginger, poppy seeds, coconut scrapes to a fine paste.
2. Soak the saffron strands in warm milk.
3. Heat butter in a pan and roast cinnamon, bay leaves, cardamom, cloves and nutmeg.
4. Now add white onion and saute.
5. Add the ground paste to the pan and saute.
6. Add the contents from the pan into the rice cooker. Add milk with saffron, cream, salt, sugar, turmeric powder, basmati rice, vegetables and warm water into the rice cooker.
7. Cook until it’s done and keep it covered until ready to serve.
8. Gently roast the dry fruits and nuts in ghee.
9. Right before serving, add the dry fruits, fruits and give it a gentle toss.
10. Sprinkle rose water and serve.
