Cinnamon Sugar Doughnuts

Ingredients:
For the batter:
1 1/4 cups- Cake flour
1/2 cup- Granulated white sugar
1 1/4 tsp. Baking powder
1/8 tsp. Ground nutmeg
3/4 tsp. Salt
1/2 cup- Buttermilk
1- Egg
1 1/2 tbsp. Melted butter
For the cinnamon sugar coating:
1 cup- Granulated white sugar
1 1/2 tsp. Ground cinnamon

Method
:
1. Preheat oven to 220 degrees Celsius (or 425 degrees Fahrenheit).
2. Grease mini doughnut pan with oil or butter.
3. Sift together the flour, sugar, baking powder, nutmeg and salt.
4. In a separate bowl, combine melted butter, buttermilk and eggs, and beat well.
5. Combine dry and wet ingredients, and mix gently until just incorporated. Do not over-mix.
6. Fill each doughnut mold only half full.
7. Bake for 4-6 minutes or until doughnut is springy to the touch.
8. Pry doughnuts out of the molds while they are still relatively hot, and roll them around in the cinnamon sugar coating mixture. The coating will only stick while doughnuts are hot. If you find that it's not sticking, brush some melted butter onto the surface of the doughnut before dredging it in the sugar.

Fancy Doughnuts

Ingredients:
1 tbsp. Unsalted butter, melted
1/3 cup plus 1 tbsp. Buttermilk
1- Egg, lightly beaten
1 cup- Cake flour
1/3 cup plus 1 tbsp. Granulated sugar
1 tsp. Baking powder
1/2 tsp. Salt
1 tsp. Vanilla extract
1 bowl- Colored sprinkles
For the glaze:
2 cup- Powdered sugar
1/3 cup- Milk

Method:
1. Preheat oven to 400 degrees F.
2. Spray doughnut pan lightly with non-stick cooking spray and set aside.
3. In a large bowl, whisk together melted butter, buttermilk, vanilla extract and egg. Set aside.
4. In a medium bowl, whisk together cake flour, sugar, baking powder and salt. Pour dry ingredients into the wet ingredients and stir to combine.
5. Spoon batter into doughnut pan wells so they’re about two-thirds of the way full. Bake for 8-12 minutes, or until golden colored on both sides.
6. Allow to cool in pan for a minute or two, then turn out onto a cooling rack with wax paper underneath and cool completely.
7. To make the glaze: Microwave all glaze ingredients in a shallow bowl for 10 seconds at a time, stirring between, until melted. Dip cooled doughnuts into the glaze or spoon it over the doughnuts then dip them into sprinkles and return to cooling rack to dry.
