Orzo Pasta with Chicken

Ingredients:
2 tbsp. Butter
1 small- Onion, chopped
1 small- Tomato, chopped
2- Garlic cloves, chopped
½ tsp. Ginger, crushed
2 tbsp. Tomato ketchup
1 ½ cup- Chicken, chopped
2 cups- Orzo pasta, cooked al dente and drained
1 tbsp. Lemon juice
Salt and ground black pepper to taste
¼ cup- Parmesan cheese, grated
¼ cup- Parsley, sliced

Method:
1. Heat a large skillet over medium-high heat, add the butter, onion, garlic and ginger and saute until tender.
2. Add the tomato, lemon juice, salt and chicken and cook until the chicken is tender.
3. Add tomato ketchup, black pepper, orzo pasta and mix well.
4. Add grated parmesan cheese and parsley, mix well and serve.

Spicy Baguette Sandwich

Ingredients:
1- French baguette
Iceberg Lettuce
Cucumber slices
Tomato slices
Cheese slices
½ cup- Mayonnaise
1 tbsp. Mustard paste
200 gm. Mutton, cut in to small pieces
1 tsp. Fresh lemon juice
1 tsp. Red chili powder
1 tsp. Paprika
½ tsp. Black pepper powder
Salt to taste
2 tbsp. Olive oil

Method:
1. Marinate the mutton with lemon juice, red chili powder, paprika, black pepper powder and salt.
2. Heat olive oil in a pan and then sauté the marinated mutton until cooked.
3. Then chop it coarsely using a knife and keep aside.
4. Cut and open your french bread and spread mayonnaise and mustard paste.
5. Then arrange iceberg lettuce, cucumber slices, tomato slices, cheese slices and prepared mutton.
6. Press bread together and serve……..

Pasta Shells in white sauce with Chicken and Peas

Ingredients:
2 cups- Shell Pasta
1 cup- chicken, cut in cubes
½ cup- Green peas
½ tsp. Ginger, crushed
½ tsp. Garlic, crushed
½ cup- Onion, chopped
2 tbsp. Olive oil
Salt and pepper to taste
For White Sauce:
2 tbsp. Butter
1 cup- Milk
2 tsp. All-purpose flour
1 tbsp. Cream cheese
2 tbsp. Parmesan cheese, grated
½ tsp. Garlic powder
Salt and Pepper to taste

Method:

1. Cook the pasta until just al dente, drain and set aside.
2. In a frying pan heat olive oil add ginger, garlic, onion and soute for 2-3 minutes.
3. Add chicken cubes, salt, pepper, green peas and fry until cooked. Keep aside.
4. For the white sauce: Heat a nonstick pan and melt the butter.
5. Add the all-purpose flour and keep stirring to avoid any lumps being formed.
6. Reduce heat and add milk, keep stirring till the sauce thickens.
7. Then add cream cheese and parmesan cheese.
8. Season with salt, pepper and garlic powder up to your taste.
9. Add the pasta into the white sauce. You may add some pasta water if required to loosen the pasta-sauce mixture and keep on low heat.
10. Add in the chicken and peas mixture. Mix well, turn off the heat and serve.

Garlic Bread

Ingredients:
1- French baguette, sliced
3-4 cloves- Garlic, minced
2-3 tbsp. Butter, at room temperature
1 tbsp. Olive oil
1 tbsp. Fresh parsley, chopped finely
Salt and Pepper to taste

Method:
1. Preheat oven to 180°C. 
2. In a small bowl add garlic, butter, olive oil, parsley, salt and pepper and mix well.
3. Place french bread slices on a baking sheet. Brush with melted butter mixture making sure to get some of the herbs and garlic on both sides of each slice.
4. Place on the middle oven rack and toast about 6-8 minutes or until the edges started to brown a little.
5. Enjoy this with the cup of coffee.

Kiwi - Banana Salad

Ingredients:
5- Kiwis, peeled and cut in to small pieces
2- Ripe banana, cut in to small pieces
¼ cup- Red or yellow bell pepper, diced
1 tbsp. Shallot, chopped
1 tbsp. Lemon juice
1 tbsp. Olive oil
1 tsp. Vinegar
2 tsp. Honey
Pinch of salt
Black pepper to taste
10-12 Cashew nuts, toasted
1 tbsp. Mint leaves, chopped


Method:
1. Whisk lemon juice, olive oil, shallot, vinegar, honey, salt and pepper in a medium bowl.
2. Add kiwis, bananas, bell pepper, cashew nuts and mint leaves, toss to coat.
3. Serve chilled.

Desi style Chicken Pasta

Ingredients:
200 gm. Chicken, boneless and cut into tiny bits
2 cup- Pasta
2 medium- Onion, chopped
1 medium- Tomato, chopped
2- Green chilies, chopped
¼ tsp. Turmeric powder
1 tsp. Ginger-Garlic paste
½ tsp. Red chili powder
½ tsp. Black pepper powder
Salt to taste
¼ cup- Coriander leaves
3 tbsp. Oil

Method:
1. In a pot bring enough water to boil the pasta, add 1 tsp. salt to water. When water boils add the pasta and cook for 8-10 minutes or until pasta is tender. Drain and keep aside.
2. Heat oil in a pan when hot add the chopped onions and fry till brown.
3. Add the tomatoes and fry until tomatoes are mashed.
4. Add ginger-garlic paste fry for 1-2 minutes.
5. Now add green chili, turmeric powder, red chili powder, black pepper powder and salt to it.
6. Add chicken, stir well and cook covered on medium heat until chicken is tender (do not add water).
7. Add cooked pasta to the chicken, mix well until pasta is well coated with chicken mixture.
8. Garnish with coriander leaves. Serve hot.

Macaroni with Beef

Ingredients:
1 large packet- Macaroni,
500 gm. Beef
1 cup- Bell pepper
2- Onions, chopped
1 tsp. Garlic, chopped
½ tsp. Chili powder
½ tsp. All spice powder
½ cup- Tomato, finally chopped
2 tbsp. Olive oil
Salt & Pepper to taste

Method:
1. Heat olive oil in a pan and fry the onion and garlic until soft.
2. Add the chili powder, beef and cook for few minutes.
3. Add tomato and the seasonings.
4. Simmer while the macaroni is cooking. Cook the macaroni until just al dente, drain and set aside.
5. Add bell pepper to the beef and fry for few minutes.
6. Add macaroni and mix well.
7. Serve with crusty bread

Italian Pasta with Baked Cheese Sauce

Ingredients:
6 ounces large size- Pasta / Spaghetti, boiled
½ cup- Green peas (Mutter), boiled
1- Spring onion (only green part), chopped
½ piece- Cheddar cheese
1 tsp. Mix dry herbs (Oregano, Thyme, Basil)
1 tbsp. Butter (Makhan)
2 tbsp. Flour (Maida)
1 tsp. Black pepper (kali mirch), crushed
2 cups- Milk
1 small- Apple, chopped (optional) but i use 
½ tsp. Salt
½ tsp. Sugar

Method:
1. Cook pasta according to package directions and drain.
2. Preheat oven at 180 degree C.
3. Meanwhile, melt butter in a medium saucepan over medium low heat.
4. Then add flour mix well and then add milk and whisk when you see the milk is going to saucy then add salt, sugar, black pepper and all herbs and mix.
5. Add green peas, pasta, apple and spring onion turn off the heat.
6. Pour in baking dish and sprinkle cheddar cheese.
7. Kept in oven only 10 minutes melt the cheese.
8. Serve yummy and delicious Italian Pasta with Baked Cheese Sauce.

Penne Pasta with Fresh Vegetables

Ingredients:
8 ounces- Penne pasta, uncooked
1- Onion, sliced
1 cup- Carrots, sliced
1 tbsp. Olive oil
½ tsp. Garlic, minced
1 tbsp. Tomato sauce
1 cup- Broccoli florets
1 cup- Zucchini, sliced
1 cup- Cauliflower florets
1 tsp. Dried basil
1 tsp. Dried thyme
¼ tsp. Dried oregano
½ tsp. Salt
¼ tsp. Pepper powder
5 tsp. Parmesan cheese, grated
Spring onion for Garnish

Method:
1. Cook pasta according to package directions and drain.
2.  Meanwhile, in a large nonstick skillet, saute the onion in oil.
3.  Add the garlic; cook for 1-2 minutes.
4.  Stir in the Carrot, broccoli, zucchini, cauliflower and soute until crisp-tender.
5.  Add tomato sauce, dried basil, thyme, oregano, salt, pepper and mix well.
6. Reduce heat; simmer, uncovered, for 4-5 minutes or until vegetables are tender.
7. Stir in pasta, sprinkle with cheese and toss well to coat.
8. Garnish with spring onion and serve immediately.

Pasta with Broccoli

Ingredients:
500 gr. Pasta, cooked
300 gm. Broccoli florets
Pinch of Saffron, soaked in 1 tbsp. of warm milk
1 large- Onion, chopped
1 tsp. Ginger-Garlic, crushed
¼ tsp. Turmeric powder
1 tbsp. Tomato ketchup
1 tbsp. Olive oil
4 cubes- Cream cheese, mashed
Salt and Pepper to taste

Method:
1. Heat olive oil in a large saucepan; fry the onion over medium-high heat until light brown in color.
2. Add ginger-garlic and cook for another minute.
3. Add turmeric powder, tomato ketchup and fry for few seconds.
4. Mix the broccoli florets and fry for 3-4 minutes.
5. Then add the cooked pasta, saffron milk, cream cheese, salt, pepper and mix all together, leave covered for 4-5 minutes on very low flame.
6. Serve and enjoy………..

Chicken Spaghetti


Ingredients:
8 oz. package- Spaghetti
2- Chicken breasts, cooked and chopped
2 tbsp. Butter
2 tbsp. All-purpose flour
Salt to taste
½ tsp. Black pepper powder
½ cup- Chicken broth
1 cup- Milk
1 cup- Carrot, diced
¼ cup- Green bell Pepper, diced
¼ cup- Onion, diced
1/8 tsp. Cayenne pepper
1 cup- Cheddar cheese, grated
Spring onion to garnish

Method:
1. Preheat oven 375 degrees C.
2. Boil spaghetti until just under al dente.  Drain and set aside. 
3. Meanwhile, melt butter in large nonstick pan over medium heat. 
4. Add flour, pinch of salt and black pepper powder, stir until mixed thoroughly. 
5. Add onion and soute for few minutes.
6. Slowly add chicken broth and milk to pan, raise heat slightly to a low simmer and stir constantly until mixture thickens. 
7. Stir in carrot, chopped chicken, and green bell pepper, toss until everything is coated. 
8. Add spaghetti and cayenne pepper to pan and toss again. 
9. Slide into a lightly greased 9×13 inches pan and top with the grated cheddar cheese. 
10. Bake at 375 degrees for about 15-20 minutes or until heated through and cheese has melted. 
11. After 20 minutes baking mix everything and garnish with spring onion.
12. Serve with a simple salad and enjoy.....

Chicken Shawarma Pizza

Ingredients:
For Pizza dough:
2 cups- All-purpose flour (Maida)
1 tsp. Dried yeast
1 tsp. Sugar
½ tsp. Salt
2 tbsp. Oil
1 tbsp. Milk powder
1- Egg
Lukewarm water
For Pizza topping:
1 cup- Chicken fried with shawarma mix
1 cup- Mozzarella cheese
3 tbsp. Pizza sauce
1- Tomato, cubed
½ - Sliced onion, mixed with paprika powder
½ cup- Green capsicum, cubed
½ cup- Black olives, sliced
1 tsp. Zaatar powder

Method:
1. Put yeast in 3 tbsp. lukewarm water and make frothy. In a bowl add all dry ingredients and then add yeast, oil, egg and make smooth dough with lukewarm water and keep covered in an oiled bowl in a warm place, for 1 hour or till well risen and doubled.
2. On a floured surface, roll out dough and place on a greased 10 inch pizza pan, prick well with fork and let rise again in a warm place for 5-10 more  minutes.
3. Bake blind for 7-8 minutes in a preheated oven of 200 degree C. Remove and cool.
4. Spread with pizza sauce. Arrange onion, capsicum, tomato, black olive and fried chicken evenly over prepared base.
5. Sprinkle with zaatar powder and mozzarella cheese.
6. Bake on 200 degree C for another 18-20 minutes till base crisps and top light golden.

Prawn Pizza

Ingredients:
For Pizza dough:
2 cups- All-purpose flour (Maida)
1 tsp. Dried yeast
1 tsp. Sugar
½ tsp. Salt
2 tbsp. Oil
1 tbsp. Milk powder
1- Egg
Lukewarm water
For the prawns:
200 gm. Prawns, peeled and deveined
2 tbsp. Olive oil
2 tbsp. Lemon juice
Salt to taste
½ tsp. Black pepper powder
1 clove- Garlic, crushed
For Pizza topping:
1 cup- Mozzarella cheese
1/3 cup- Pizza sauce
1- Tomato, sliced
1/2 cup- Red bell pepper, sliced

Method:
1. For the prawns: Heat olive oil in a pan, then put garlic, prawns, black pepper powder and fry for few minutes. Then put lemon juice and salt and cook for few minutes.
2. For Pizza dough: Put yeast in 3 tbsp. lukewarm water and make frothy. In a bowl add all dry ingredients and then add yeast, oil, egg and make smooth dough with lukewarm water and keep covered in an oiled bowl in a warm place, for 1 hour or till well risen and doubled.

Fried Chicken Tenders

Ingredients:
6- Chicken Breasts, boneless
Marinade:
1/8 tbsp. Garlic powder
½ tsp. Onion powder
2 tbsp. Lemon juice
1 tsp. Paprika
1 tsp. Black pepper powder
½ tsp. Red chili powder
Salt to taste
Coating:
2 cups- All-purpose flour
2 tsp. Salt
¾ tsp. Pepper
1/8 tsp. Paprika
1/8 tsp. Garlic powder
1- Egg, beaten
1 cup- Milk
Oil for deep frying

Method:
1. Cut chicken breasts into strips.
2. Combine all marinade ingredients in a bowl or sealable bag and marinade chicken strips overnight in the refrigerator.
3. In a shallow bowl beat together 1 egg and 1 cup of milk.
4. Combine all of the coating ingredients in another shallow bowl and mix well.
5. Dip the chicken strips into the egg mixture, then into the coating and double dip.
6. Fry in the deeper fryer at 375 degrees until golden brown or until they float.
7. Drain on paper towels.
8. Serve with any dipping sauce.

Mushroom Pizza

Ingredients:
For Pizza dough:
2 cups- All-purpose flour (Maida)
1 tsp. Dried yeast
1 tsp. Sugar
½ tsp. Salt
2 tbsp. Oil
1 tbsp. Milk powder
1- Egg

For Pizza topping:
1 cup- Mozzarella cheese
3-4 tbsp. Pizza sauce
1- Tomato, sliced
½ cup- Green and red bell peppers, small cubed
¼ cup- Green onion
1 cup- Mushroom, sliced
½ cup- Precooked Chicken
½ cup- Olives
 
Method:
1. Put yeast in 3 tbsp. lukewarm water and make frothy. In a bowl add all dry ingredients and then add yeast, oil, egg and make smooth dough with lukewarm water and keep covered in an oiled bowl in a warm place, for 1 hour or till well risen and doubled.
2. On a floured surface, roll out dough and place on a greased 10 inch pizza pan, prick well with fork and let rise again in a warm place for 10-15 more  minutes.
3. Bake blind for 7-8 minutes in a preheated oven of 200 degree C. Remove and cool.
4. Spread pizza sauce over pizza dough. Sprinkle tomato, bell peppers, green onion, chicken, mushrooms, olives and Mozzarella cheese on top.
5. Bake on 200 degree C for another 18-20 minutes till base crisps and top light golden.

Beef Burger

 

Ingredients:

For the burger:
540g- Beef, minced
25g- Coriander leaves, finally chopped
1- Onion, chopped
1- Egg yolk
1 tbsp. Olive oil
Salt to taste
Ground black pepper to taste
To serve:
4 slices Cheese
4 tbsp. Mayonnaise
Lettuce
Buns
1- Tomato, sliced
Method:
1. Place all the burger ingredients in a mixing bowl and stir to combine. Shape into four equal-sized patties.
2. Preheat the grill to hot. Cook the burgers under the grill for 15 minutes, or until cooked through, turning once.
3. Take one part of the bun and put mayonnaise, cheese, tomato, a beef piece, cucumber, lettuce, then again mayonnaise and then second part of bun and serve.

Crispy Chicken Burger

Serves: 4 Buns
Ingredients:
For the buns:
250gm. White bread flour or All-purpose flour
10gm. Instant yeast
10gm. Sugar
5gm. Salt
30gm. Unsalted butter, melted
140ml. Warm water
½ cup- Milk
2 tsp. Sesame seeds
For the burger:
100 gram- Bread crumbs
2- Egg white, beaten until frothy
cooking oil for deep frying
Mayonnaise, Cucumber, Tomato, Lettuce, buns, Cheese

For the chicken:
300 gram- Chicken, finely chopped
30 gram- Onion, chopped
1 clove- Garlic, finely chopped
1 tbsp. Green onion, thinly sliced
1- Egg yolk
2 tbsp. Bread flour
½ tsp. Pepper powder
Salt to taste

Method:
For the bun:
1. Mix together the flour, salt, sugar and yeast into a large mixing bowl. (If your yeast needs activating in water, follow the instructions on the packet and subtract whatever water you need to use from the 140ml water listed above.
2. Weigh the water into the mixing bowl with the dry ingredients, pour in the melted butter and mix it all together to form a dough.
3. Tip the dough out on to a floured work surface and knead it until it has formed smooth, elastic dough.
4. Form the dough into a ball, lightly oil the inside of the mixing bowl and put the ball of dough back into the mixing bowl. Cover the bowl with a plastic-wrap, put the bowl somewhere warm and leave it to prove until it has doubled in size(1-2 hours).
5. When the dough has doubled in size, tip the dough out of the bowl, cut it into quarters and shape each quarter into a ball. Leave the balls of dough on the work-top, cover them with a lightly oiled plastic-wrap and leave them to prove for a second time until they have doubled in size.
6. When the balls of dough have doubled in size, put them onto a lightly oiled baking tray and gently press them down to form the burger bun shape.
7. Brush the top of each disk of dough with some milk and sprinkle with sesame seeds.
8. Preheat the oven to 170°c.
9. Leave the buns to rise for the final time until they have puffed up (not necessarily doubled in size but close).
10. Then put the tray with the buns into the oven and bake them for 20 minutes.
When they are cooked, take the burger buns out of the oven and leave them on the tray until they have cooled to room temperature (when they come out of the oven they will feel very firm but leaving them to cool on the tray greatly softens the crust).
For the burger:
1. Chicken: Mix all ingredients together until blended. For those into 4 parts, flat round shape.
2. Dip in beaten eggs and roll them in bread crumbs.
3. Heat oil in a wok and deep fry them until cooked on both sides.
4. Take one part of the bun and put mayonnaise, tomato, lettuce, a chicken piece, cucumber, cheese then again mayonnaise and then second part of bun and serve.
