Soya Aloo Sabzi


Ingredients:
1 bunch- Soya patta / Dill leaves, chopped
2 medium- Potatoes, chopped
1 medium- Onion, sliced
1 small- Tomato, chopped
2- Green chili
½ tsp. Ginger-Garlic paste
¼ tsp. Turmeric powder
2 tbsp. Oil
1 tsp. Cumin seeds
1 tsp. Mustard seeds
6-8 Curry leaves
Salt to taste
Coriander leaves for Garnishing

Method:
1. Heat oil in pan add cumin seeds, mustard seeds and curry leaves.
2. Add Onions and fry until transparent.
3. Add tomatoes, ginger-garlic paste, green chili and fry for few minutes.
4. Add in chopped potatoes, fry well.
5. Add in turmeric powder and salt. Add little bit of water.
6. Fry the masala with potatoes well for 5 minutes.
7. Now add in chopped dill leaves.
8. Mix well and sprinkle 2 tbsp. of water over it. Cover the pan and cook till potatoes turn out soft.
9. Garnish with Coriander leaves.
10. Serve with rice or paratha.
