Khichra

Ingredients:
500 gm- Mutton, boneless cubes
1 cup- Wheat, washed and soaked for 2 hours
1 cup- Lentil pulses, washed and soaked for 2 hours
1 cup- Rice, washed and soaked for 2 hours
6-7 glasses- Mutton stock
1 tbsp. Garlic, crushed
1 tbsp. Ginger, crushed
2 tbsp. Mint leaves, chopped
2 tbsp. Coriander leaves, chopped
1 cup- Ghee
5 tbsp. Khichra spice mix
Salt to taste
For khichra spice mix:
4- Red chilies
1 tsp. Paprika
1 tsp. Turmeric
1 tsp. Carom seeds
1 tsp. Garlic powder
1 tsp. Dried ginger
1 tsp. Coriander seeds
1 tsp. Cumin seeds
1 tsp. Nigella Seeds
1 tsp. Star aniseed
2- Cardamom
3- Cloves
1- Bay leaf

Method:
1. Roast all the ingredients under khichra spice mix and grind together.
2. Heat 1 cup of ghee add mutton cubes, ginger, garlic and khichra spice mix and fry for few minutes.
3. Add soaked wheat, lentil pulses, rice and mutton stock water.
4. Boil on low heat for 2-3 hours or until all the ingredients are completely tender. Stir several times during cooking.
5. Then add salt, mint leaves and coriander leaves.
6. Cover and cook for few minutes. Serve hot.
