Mutton Fried Rice

Ingredients:
2 cups- Basmati rice
4 cups- Water
1 tsp. Oil
250 gm- Mutton, cut in to cubes
2- Eggs
1/4 cup- Green peas 
1/4 cup- Spring onions, chopped
1/4 cup- Green bell pepper pieces
1/4 cup- Yellow bell pepper pieces
1/4 cup- Red bell pepper pieces
1/4 cup- Green beans pieces
3 tbsp. Soya sauce
4 tbsp. White Vinegar
2 tbsp. Lemon juice
2 tbsp. Oil
Salt to taste
1 tsp. Red chili powder
1/4 tsp. White pepper powder
1/4 tsp. Black pepper powder

Method:

1. Cook rice separately & cool it in a large pan. Keep aside.
2. Marinade mutton with salt, black pepper powder, red chili powder, white pepper powder & lemon juice for 15 minutes.
3. Heat oil in the frying pan on high heat.
4. Fry the mutton until they turn slightly brown.
5. Saute green peas and eggs until they turn tender.
6. Add spring onions, green, yellow and red bell pepper and green beans mix well and stir fry. Take care that vegetables are not overdone, they should be crisp.
7. Add cooked rice, soya sauce, white vinegar and mix thoroughly.
8. Serve Hot.
