Tomato Curry

Ingredients:
4 medium- Tomatoes, cut in to cubes
1- Onion, sliced
2- Green chili, sliced
1 tsp. Ginger, crushed
1 tsp. Garlic, crushed
10-15 Curry leaves
½ cup- Cooking oil
1 tsp. Mustard seeds
2- Garlic cloves, chopped
Coriander leaves as required
Salt to taste

Method:
1. Heat half of the oil in a large pot.
2.  Add onion, and sauté till onions turn translucent.
3. Add ginger, garlic and sauté for one more minute.
4. Add tomatoes and salt to taste to the pot then bring to a boil.
5. Reduce heat, cover, and simmer for 15 minutes.
6. Puree in small batches in a blender till completely smooth. You want a nice velvety texture.
7. Heat remaining oil in a pan, add mustard seeds.
8. Then add chopped garlic, green chili and curry leaves.
9. At the last stage add the tomato mixture and garnish with coriander leaves.
10. Serve with white rice and raitha.
